Introduction
Making coffee is an art and to master all the tricks, you need to follow certain rules. The
secret to producing a perfect cup of espresso coffee is actually quite complex and the part
the equipment plays in the process is vitally important. For best results and unquestionable
quality, you need to correctly combine three elements:
l. a quality blend.
2. appropriate use of available equipment.
3. the expertise and professionalism of the coffee maker. Contrary to popular belief, there's
more to producing a good cup of coffee than simply choosing a certain blend.
The experience and skill of the operator in following the right procedures to prepare the bev-
erage and using the right machinery are a make-or-break factor in creating a minor master-
piece. This is why, for the professionals, the choice of espresso machine and grinder-doser
is of paramount importance. Gaining intimate familiarity with these tools of the trade, keep-
ing them in tip-top working order and exploiting their full potential is an ability exclusive to
the true coffee masters.
The quality of a good espresso coffee comes from a series of operations, one of which is
grinding, whose role should not be underestimated. It follows, therefore, that the grinder-
doser is one
of the operator's key tools and must be built to meet certain standards, namely it has to be:
sturdy, strong and functional.
It is widely agreed amongst experts that only freshly ground beans manage to retain all the
fragrance so that the resulting coffee has a full aroma. Hence you need to use grinder-dosers,
whose job is to grind whole coffee beans into powder and dispense the right dose - usual-
ly 6.5 to 7 g of the ground coffee blend - in order to enjoy espresso coffee at its best.
The grinder-dosers feature devices (dose counters) to automatically keep count of the num-
ber of doses dispensed, in addition to a device for adjusting grinding with micrometric pre-
cision.
The GRINDING BURRS are the true heart of the grinder-doser. The espresso's successful out-
come depends largely on their skilful use. The burrs consist of two rings with teeth, one of
which turns at high speed to break up the whole coffee beans, crush them and ultimately
grind them into a powder.
The burrs consist of two identical toothed tempered steel discs, which are fitted in opposing
positions, one on the motor shaft and the other on the threaded ring. Rotation speed ranges
from 900 to 1400 rpm and, in some cases, this can lead to overheating, which alters the
flavour of the coffee.
Our SR80N grinder-doser uses flat burrs measuring 63 mm in Ø. It is worth noting that the
various types of coffee can not all be ground in the same way. Consequently, to get the right
grind, simply tighten or unscrew the circular ring located under the hopper - i.e. the clear
container that holds the coffee and conveys it towards the burrs - being careful to follow the
directions given herein.
