Food re-hydration:
The dehydrated fruits can be eaten just as they are or rehydrate them before eating, the vegetables must
be rehydrated (if they are to be added straight to a soup or sauces, just toss them in).
The vegetables can be re-hydrated by boiling them in water, heating them in steam or soaking them.
Do not add sugar or salt because that would delay the re-hydration process.
Soaking:
While soaking, it is recommended to keep fruits and vegetables in the refrigerator, barely soaked in water
or stock, so as to prevent the bacterial growth.
The soaking time is variable but generally it is recommended as four (4) hours for fruits and two (2) to ten
(10) hours for vegetables.
Rehydration through simmering:
For fruits: one cup of fruits with one cup of water allowed to simmer until the right consistency is reached.
For vegetables: one cup of dehydrated vegetables with a cup of boiling water and allow it to soak until the
proper consistency is reached.
Steam re-hydration:
For fruits: steam cook fruit for 3 to 5 minutes approximately until fruit is plump.
For vegetables: steam vegetables until they are cooked (depends on type of vegetable).
