Ingredients
220g fresh strawbe
rries

tablespoon lemon ju
ice
220ml full-cream m
ilk
1 egg yolk
90g caster sugar
100ml whipping cr
eam
Method
1. Wash and hul
l the strawberries. P
uree them with the
lemon juice and
milk, using a hand
blender.
2. Beat together t
he egg yolk and su
gar.
3. Whip the cream
. Mix the cream, th
e egg mixture and
the strawberry
mixture until they
are thoroughly com
bined.
4. Set the timer
on your ice cream
maker for 25 mi
nutes. Pour the
mixture into the bo
wl with the paddle
running and leave
to freeze-
churn.
5. If you prefer a
firmer consistency
, place the bowl of ic
e cream in your
freezer for a further
30 minutes or so.

Method
1. Whip the cream
and place in a sa
ucepan with the m
ilk and whole
vanilla pods. Gentl
y bring to the boil,
then take off the hea
t and allow
to cool.
2. In a bowl, beat
together the egg yo
lks and sugar.
3. Scrape out the
vanilla seeds and a
dd to the milk mixt
ure.
4. Return the sau
cepan to the heat an
d gently bring back
to the boil. Pour
in the egg mixture
and beat together.
5. Allow to cool. S
