TEST PROCEDURE FOR OVEN TEMPERATURE MEASUREMENTS
ELECTRIC OVENS

The following is the preferred method to be used when calculating any Mean Oven Centre 
Temperature (M.O.C.T.).

Equipment: - Surface Temperature Probe

Part No. C00222632 (5600081)

Digital Thermometer

Part No. C00222854 (5700036)

Thermocouple

Part No. C00222884 (5700066)

Temperature Test Gate

Part No. C00222592 (5600041)

1.

Remove all cooking utensils from the oven cavity and place a single rod shelf on the runners 
nearest the centre of the oven.

2.

Fit the thermocouple leads to the temperature test gate so that the thermocouple junction is 
positioned as near to the centre of the gate as possible. See Fig. 7.

3.

Position the gate on the centre of the rod shelf so that the large plates on the gate are facing the 
direct heat source.

4.

Route the thermocouple wire out through the front of the oven and close the oven door.

5.

Turn the oven thermostat up past the 200°C setting, then slowly reduce the temperature to 200°C.

6.

Measure the temperature of the oven at the fourth thermostat overshoot and the fourth 
temperature undershoot. See Fig. 8.
OVERSHOOT

Maximum temperature reached after the thermostat indicator cuts out.

UNDERSHOOT

Minimum temperature reached after the thermostat indicator cuts in.

CALCULATING THE MEAN OVEN CENTRE TEMPERATURE

Note: The Thermocouple junction

should not touch any
surrounding metalwork.
