OPERATION
THIS APPLIANCE IS NOT INTENDED FOR
COMMERCIAL USE.
LIGHTING A FIRE. All fires should be made inside the
charcoal tray on top of the wire grate, while the tray is in
place inside the smoker cabinet. Do not move a charcoal
tray that contains a lit fire.
TO START A FIRE:
1. Remove smoker box and smoker box rack.
2. Place a small amount of charcoal onto the charcoal tray
grate.
3. Light the charcoal with: an electric starter, a chimney
starter, or charcoal starter fluid.
4. When charcoal is lit and evenly white and smoldering,
spread the briquettes out on top of the charcoal grate.
Take care and use a pair of long handle tongs and an
oven mitt.
MAINTAINING THE FIRE. When slow cooking you will need to add fresh fuel to the fire. To maintain a low even temperature
slowly add only a few charcoal briquettes at a time to the fire. This will help you maintain an even temperature during the slow
cooking process. Take care and use long handle tongs and wear oven mitts to add new pieces of charcoal.
