Classic Waffles
1½ cups flour
3 large eggs, separated
½ cup cornstarch
2 Tbsp. sugar
2 Tbsp. cornmeal
1¾ cups milk
1 Tbsp. baking powder
½ tsp. vanilla extract
1 tsp. salt
½ cup butter, melted
1. In a large bowl, whisk together flour, cornstarch, cornmeal, baking
powder and salt.
2. In another bowl, use the mixer to beat egg whites until soft peaks form.
Add sugar and beat until stiff peaks form.
3. In a third bowl, whisk together egg yolks, milk and vanilla.
4. Using a rubber spatula, stir milk mixture into flour mixture until all
ingredients are moistened (DO NOT overmix; small lumps are fine).
5. Stir in the butter and fold in beaten egg whites until combined.
6. Pour batter onto preheated waffle iron. Waffles should be golden and
crispy after 3–5 minutes on high (waffle irons may vary; check your
first batch closely for doneness).
Makes approximately 8 medium/large waffles)
Serves 2–4
Crowd-Pleasing Guacamole
2 avocados
2 Tbsp. lemon juice
¼ large onion, chopped
½ tsp. salt
2–3 cloves garlic, minced
2 Tbsp. chunky salsa (optional)
1 Tbsp. jalapeno peppers, chopped
1. Mash the avocados using beater on speed 2–3.
2. Add remaining ingredients and mix on low until desired consistency is
reached, scraping sides of bowl as needed.
Serves 4
