REFERENCE STANDARDS
The appliances are designed in compliance with the directive 89/336/EC and
its amendment 93/68/EC.
The present appliance is designed exclusively for proving dough and warming
food, and it is intended for professional applications.
INSTALLATION
Positioning:
install the appliance in a ventilated area. The appliance has to be installed at a
distance of at least 3 cm from the wall. Remove all adhesive film from the external
walls of the cabinet before using the machine.
Electrical connections:
the appliance is designed to operate at the voltage of 220 V.
In the event of power cable replacement, use cables that resistant up to 40° C.
OPERATION
To start the appliance turn on the thermostat. Internal temperature can be
adjusted up to 90° C.
HUMIDIFIER
To avoid drying of product during proving, fill the tray placed at the bottom of
the proofer with water and adjust the temperature with the thermostat knob.
The orange led indicates operation of proofer.
CLEANING
WARNING:
WHEN CLEANING THE PROOFER MAKE SURE YOU NEVER THROW WATER ON THE
HEATING ELEMENT.
IMPORTANT:
Disconnect the appliance from the power supply before making any cleaning or
maintenance operations.
Clean external stainless steel walls with non-abrasive products. DO NOT use
any detergents containing chlorine;
Do not use cleaning cloths or detergents containing abrasive substances;
