   Charcoal

Charcoal comes in two different forms when used for cooking: lump charcoal and briquettes. Lump
charcoal has more of a natural look and varies in size. Briquettes are generally uniform is size and
shape throughout the bag.

The preferred charcoal of choice is lump charcoal as it has a few advantages. Lump charcoal produces
less ash which in turn increases time between ash clean out in the bottom of your Kamado Rocket.
Lump charcoal will also burn hotter and faster depending on the rate in which you allow it. Once the
lump charcoal is charred, almost all of the impurities  like tars, etc. are passed off through vapor
leaving the end result of  a clean carbon lump charcoal.

Briquettes are made up of compressed ground charcoal that have been further charred. Sometimes they
will also have additional additives to change the burn properties like flavors, and lighting enhancers to
speed up the lighting process.

Lighting Your Charcoal

Never use starter fluid!

Not only will the starting fluid be absorbed in to shell of your Kamado Rocket

and ruin the flavoring of your food, it will void your warranty. There are many ways to get your
charcoal lit including the use of the built in burner on the medium, large, and extra large models,
(please see the lighting instructions in the gas burner section of this manual). Some of the other
methods to light the charcoal that may be used include fire starter blocks, electric charcoal starters,
propane/map gas torches, and chimney starters, etc.

 Fire It Up!

If using only the gas burner, please skip to closing the lid and continue.

Remove ash and debris if needed. Stir existing charcoal from the last cook to get the ash to drop

to the bottom of the Kamado Rocket. If need be, remove the ash from the bottom to prevent restricting
the airflow.

Determine how much charcoal you will need for your cook. For obvious reason, the shorter the

cook, or smaller amount of food to be prepared will require less charcoal. If you are doing a long, or
“low and slow”, you will need more charcoal. It is ok if you had a little more than needed, as you can
always control the burn rate as well as the temperature by adjusting the airflow via the draft door and
damper top.

Open the damper top, the draft door, as well as the lid to allow for adequate airflow when first

starting your grill.

Light the charcoal using the previously discussed instructions in the charcoal section.

Once the charcoal is started, close the lid and make sure the damper and draft door are properly

open for airflow.

Watch the temperature. When getting close to the desired temperature, start making adjustments

to the damper top and the draft door to control/maintain the temperature. By closing both, or restricting
airflow, the coals will burn at a lower temperature. The further you open them, you will increase
airflow as well as temperature.
