Operating pizza oven
Most pizza ovens consist of a dome with a front opening that can be
closed with a cast iron door. Above the opening a hood connected to
the flue assures smoke and odours are collected and removed safely
(see figure).
Lighting: Place a few logs in the back of the dome.

Before lighting the fire, turn on the fan at full speed and open the air intake completely on the dome.
Note! If your Exodraft control has a boost function, please activate this.
Light the fire and turn on all other exhaust fans (range hoods, etc.) and make sure there is no spillage
from the hood into the room.
When the fire has caught on, reduce the speed of the chimney fan to a point where it still removes the
flue gases safely but without quenching the flames. Remember this setting on the fan speed control,
as this will be the ideal operating position/speed of the chimney fan. If you are using one of the controls
with a temperature sensor, the control will remember the setting last used.
Refueling: In order to avoid soot and smoke in the room when adding wood to the fire, it may be
necessary to increase the fan speed for a short period of time (3 min.) during the refueling. For controls
with a boost function, please choose this option.
If you follow these instructions it will help conserve energy and at the same time assure a maximum
heating output from the heating appliance.
If you want to let the fire die out completely, you must leave the fan on until the heat in the flue has
gone down and it is safe to turn the fan off. Controls with a temperature sensor will ensure that the fan
is turned off automatically after a post purge period.
Operating boilers or high temperature appliances
Prior to start up a boiler, oven or process appliance the fan must run at full speed. Depending on the
control system the speed can be regulated to a lower setpoint.
