6. Cleaning and maintenance
All work in connection with the cleaning,
maintenance and repair of the machine must be
carried out by suitably trained and qualified
personnel who are experienced in this field.
Clean the cutting device with hot water, using a
cloth or sponge.
6.1 Disinfection and cleaning during
operation
The machine is automatically disinfected with hot
water (82 °C) after every processing step during
operation. The disinfection is controlled by the
system control unit. The cleaning unit is supplied by
the system supplier.
For disruption-free operation, ensure that the saw is
always kept clean.
Always comply with the relevant safety and hygiene
requirements (DIN EN 1672)!
Ensure that disinfectants are not brought into
contact with food, whether directly or indirectly.
6.2 Disinfection at shift end
After each shift, the saw must be cleaned and
disinfected.
To do this, select the robot program "Cleaning"
(system provider) and wait until the robot has
reached the cleaning position.
Before carrying out any cleaning or
maintenance work, disconnect the
cutter from the power supply!
Prior to carrying out any
maintenance or repair work,
disconnect the saw from the
connecting flange of the robot. To
prevent injury to hands and face,
the machine must be properly
shut down.
For maintenance work
and when devices are open
Do not add aggressive detergents! Do
not clean with steam or high-pressure
water jet! Do not immerse cutter in
water!
Clean the saw with detergents and disinfectants
approved for this type of equipment, and rinse with
hot water (82°C).
If required, use a high-pressure cleaner to rinse the
saw.
Avoid however spraying water directly onto the
bearing and lubrication points of the machine!
The hot rinsing water cleans and disinfects the saw
blade.
6.3 Cleaning the saw during
maintenance and repair work
1. For maintenance or repair, dismantle the saw
and bring it to your workshop.
2. Remove the blade and clean it.
3. Use a brush and tepid water to remove dirt
(approx. 45...55°C); if necessary, soak the tool
to dissolve encrusted deposits.
4. Add detergent to the warm water. Distribute the
foam evenly over the cleaned surfaces and let
the detergent work for 15...20 minutes.
5. Wipe off the dissolved dirt and rinse the tool
with warm water.
7. Disinfect the saw. Always complete disinfection
as a separate procedure from cleaning! Ensure
that disinfectants are not brought into contact
with foodstuffs! Rinse the saw with clean water
and dry it.

The detergents listed above are recommended
products. If you wish to use other products, you are
obliged to test them as regards suitability and
compliance with the applicable hygiene regulations.
Keep away from the spray range of
the hot water. There is otherwise a
risk of injury from scalding.
