½ cup all-purpose flour
½ cup light brown sugar
½ tsp baking powder
tsp baking soda
tsp cinnamon
tsp ground clove
tsp nutmeg
1 large egg
¼ cup buttermilk
¼ cup whole milk
½ tsp vanilla extract
½ cup shredded carrot
3 tbsp raisins
3 tbsp chopped walnuts

Directions:
1.
Mix together flour, sugar, baking powder, baking soda, cinnamon, clove and
nutmeg.
2.
Whisk together egg, buttermilk, milk and vanilla extract until smooth. Add in dry
ingredients and mix until no clumps remain. Mix in carrot, raisins and walnuts.
3.
Add 3 tbsp of waffle mix to your Honeycomb Mini Waffle Maker and cook until
golden brown on both sides.
