Transfer to a bowl and place cling fi lm over the bowl, so that it touches the custard to prevent a skin

forming and chill completely for at least 8 hours.

Turn the appliance on, remove the cling fi lm and pour the chilled mixture into the freezer bowl and leave

the mixture to thicken, 20-25 minutes.

Five minutes before mixing is completed, add the reserved pecans, and allow them to mix in completely.

This will produce a soft ice cream. For a fi rm ice cream, transfer to an air tight container and place in the

freezer for 2 hours.
