Mayonnaise
Taste the difference in homemade mayonnaise.

INGREDIENTS

large egg yolks
¾
teaspoon (3.75 ml) kosher salt
½
teaspoon (2.5 ml) Dijon mustard
1
teaspoon (5 ml) fresh lemon juice
1
tablespoon (15 ml) water
¾
cup (175 ml) vegetable oil
INSTRUCTIONS
1. Insert the chopping blade into the work bowl of the food processor. Process the egg yolks,
salt, mustard, lemon juice, and water on Low until smooth, about 30 seconds. With the food
processor still running on Low, add the oil through the drizzle hole in the pusher until all oil is
incorporated and the mayonnaise is emulsified and homogeneous.
2. Scrape down sides; taste and adjust seasoning accordingly.
Note:
For fresh herb mayonnaise: Process ¹∕³ cup (75 ml) firmly packed fresh herbs (e.g., parsley,
dill, tarragon, basil, etc.), stems removed, with the yolks before adding the oil. For a
bolder-flavoured mayonnaise, increase the salt by ¼ teaspoon (1 ml), the Dijon by ½ teaspoon
(2.5 ml) and lemon juice to 1 tablespoon (15 ml).

Vegan Caesar Dressing
A healthier, and vegan-friendly, alternative to traditional Caesar dressing. This recipe omits the egg
yolks and anchovies and achieves creaminess, thanks to the soaked cashews, and umami flavour,
thanks to the soy sauce.
Yield:
about ¾ cup (175 ml)
INGREDIENTS

cup (125 ml) raw cashews, soaked in
fresh, cold water overnight

cup (60 ml) water, plus more as needed

tablespoon (15 ml) fresh lemon juice
1½
teaspoons (7.5 ml) Dijon mustard
2
teaspoons (10 ml) soy sauce,
reduced sodium
1
garlic clove
2
teaspoons (10 ml) capers
½
teaspoon (2.5 ml) freshly ground black
pepper
pinch kosher salt, or more to taste

tablespoons (30 ml) extra virgin
olive oil
INSTRUCTIONS
1. Insert the chopping blade into the work bowl of the food processor.
2. Drain and rinse cashews. Put all ingredients, except for the olive oil, into the work bowl and
process on Low. While the unit is running, gradually add the oil through the drizzle hole in the
food pusher. Once the oil is fully incorporated, switch to High and allow to process for an
additional minute, or until very smooth.
