GENERAL PRINCIPLE

1.1. -   General principle

An extractable water tank holding one litre is placed in a position on the right hand side of the
appliance. The water it contains is propelled intermittently into the cavity by a hydraulic pump.
It comes through a duct and changes into steam on reaching the heat produced by the generator.
At first, the oven will become saturated with steam and the temperature rises to approximately 100°C.
The thermoelectric activator closes the flap valve about 1'30" after the start of the cooking.
Once this first phase is over, the production of steam is reduced so as to simply compensate the
losses, and thereby keep the cavity saturated with steam.
To avoid condensation forming on contact with any cold areas, a heating cover lines the cavity on four
of its surfaces (those not covered are the bottom and the door). The temperature of the sides is slightly
higher than 100°C.
A ventilation turbine brings about a constant cooling throughout the whole cooking process, and when
this is over, a thermoelectric activator opens the flap valve, thus freeing the steam, which will be
channelled outside. This flap valve has four holes pierced in it, so that any build-up of pressure in the
cavity is avoided. Therefore this cooking principle is not to be compared with that of a pressure-cooker,
where the pressure obtained is greater than atmospheric pressure.
The appliance is protected from overheating by a safety thermostat (200°C) fitted under the generator.
A probe in its immediate vicinity ensures the temperature is adjusted throughout the cooking process.

1.1.1. -  The detection of the water level

The detection of the water level consists of a magnetised float incorporated into the tank (the noise that
can be heard if you shake the tank when it is empty comes from the water level detector) and a card of
four I.L.S. When the magnet goes past, the nearest ILS establishes contact informing the power board
about the quantity of water. The power board sends in return the necessary information for
visualisation. This system also enables to give an indication of the setting and correct position of the
tank; for if this is not there, or is not positioned, the level display does not come on.
