Applesauce Cake
½ cup Butter or Margarine
½ cup Granulated Sugar
½ cup Brown Sugar
1 ½ cups applesauce
1 tsp. Cinnamon
½ tsp. Mace or Nutmeg
½ tsp. Ginger
1 ¾ cups Unbleached Flour
1 cup Whole Wheat Flour
¼ tsp. Salt
1tsp. Baking Soda
1 cup Raisins, seedless
Prepare applesauce and set aside.
Preheat the oven to 350°. Cream
together butter and sugars until smooth.
Season applesauce with spices and add
to butter mixture. Combine flour, salt, and
baking soda, then gradually add to
butter/sauce mixture. Add raisins and mix
well. Grease an 8 x 8 x 2” pan, and add
batter. Bake for 45 to 50 minutes, or until
a toothpick inserted in the center comes
out clean. Cool on a rack.
Easy Apple Crisp Pudding
2 cups Granola
1 ½ cup Applesauce, Unsweetened
3 tbsp. Brown Sugar
1 tbsp. Butter
1 tsp. Cinnamon
Prepare applesauce and set aside. Put
alternating layers of granola and
applesauce into a buttered baking dish.
Dot with butter, sprinkle with brown sugar
and cinnamon and bake at 350 for 20
minutes.
Country Fair Carrot Cake
3 cups Carrots, pureed
4 Eggs
1 ¼ cups vegetable Oil
2 cups Granulated Sugar
2 cups Flour
½ tsp. Salt
2 tsp. Baking Powder
1 cup Walnuts, chopped
1 tsp. Vanilla Extract
½ tsp. Ginger, ground
Process carrots and set aside. Preheat
oven to 350°. In a large mixing bowl,
combine the carrot puree and eggs. Add
oil and blend. Gradually stir in sugar,
flour, salt, and baking powder, mixing
well. Add nuts, ginger, and vanilla extract
to the mixture. Grease a 10” tube pan,
add batter, and bake for 1 ½ hours, or
until a toothpick inserted into the center
of the loaf comes out clean. Glaze or
frost as desired while still warm.
