OPERATING INSTRUCTIONS 

 
1.

Plug the power cord into the outlet and turn the power switch on. 

2.

The air temperature setting was preset at the factory to 210ºF.  

3.

Allow 60 to 90 minutes for the cabinet temperature to stabilize and the  cabinet is 
ready to use. 

4.

This unit is designed for prepackaged food only. 

5.

Do  not load the cabinet with refrigerated product while the unit is currently hold-
ing food product (in holding mode). 

CLEANING/MAINTENANCE 
 
NEVER USE 

a wire brush, steel or abrasive scouring pads (except stainless), 

scraper, file or other steel tools. Surfaces which are marred collect dirt more rapidly 
and become more difficult to clean.  Marring also increases the possibility of corrosive 
attack. 
 

NEVER

 use any corrosive cleaner. Use only cleaners approved for stainless steel. 

 

NEVER

 use cleaning solvents with a hydrocarbon base. 

 
1.

Turn the cabinet OFF and allow it to cool. CAUTION: Failure to turn off the cabi-
net and allow it to cool may result in serious burns. 

2.

Remove trays and racks; clean them thoroughly in detergent and water. 

3.

Clean the inside of the cabinet with a cloth and soapy water.  CAUTION: Clean 
the area around the thermocouple carefully to avoid damage. Do not steam clean 
or pressure wash the cabinet interior. 

4.

Wipe down the outside of the cabinet with a damp cloth.  CAUTION:  Avoid get-
ting excess water in the area of the control panel and avoid the use of abrasive 
cleaners that may damage the stainless steel finish. 

5.

Reassemble and leave the door open a few inches to allow the cabinet interior to 
dry.
