IMPELLERS
Several different impellers are available
for the Model 2100 (Figure 16).
The Dio-Cut impeller, standard on the
Model 2100, is designed to continually
move product over all cutting edges of the
cutting head to produce the longest possi-
ble usage. It is a popular, general purpose
impeller used for a wide range of products.
Dog Leg impellers produce a flake type
cut on meat and similar products that are
tough and fibrous.
The Straight Blade impeller is a versatile
design, used for special applications where
less heat build-up is desired and fewer
fines are required (depending on product).
Because of noise levels, use adequate ear
protection.
The Slant Back impeller is not as aggres-
sive in its cutting and is used for special
applications such as cooked briscuit and
pork shoulder. Because of noise levels, use
adequate ear protection.
OPERATING SPEEDS
For optimum cutting results, different
products may require a change in feed
screw speed. Fresh and cooked meats
require higher speeds, while tempered
frozen meats need a slower speed.
SPEED CONTROL
Feed screw speed determines the rate of
product delivery to the cutting unit. Since vari-
ations in the product will affect cutting rate,
feed screw speed should be adjusted for opti-
mum results. With machine running, turn the
control wheel on the variable speed drive
toward the higher numbers to increase the
speed; toward the lower numbers to
decrease the speed.
NOTE:
With the machine running, the
variable speed motor should be cranked
through the full range of speeds
daily
to keep
internal parts lubricated.
Impeller and agitator speeds are not
adjustable.
