Fried Artichokes with Horseradish Sauce
Serves 6
4 medium artichokes, trimmed, quartered, and choke removed
1 lemon, juiced
2 eggs beaten
1 cup Panko
1 teaspoon salt
oil for spraying
1 tablespoon fresh chopped parsley
Sauce for dipping:

cup sour cream
½
cup prepared white horseradish
6 tablespoons chopped fresh chives
4 teaspoons fresh lemon juice
Place artichoke quarters into a bowl with enough water to cover artichokes add lemon
juice and soak for 10 to 15 minutes. Bring a medium pot of water to a boil, add
artichoke quarters and blanch for 10 minutes. Drain and set aside.
In a shallow bowl, place eggs, in another shallow bowl place panko and salt. Dip each
artichoke quarter into egg, the gently roll into panko.
Spray each artichoke and place into air fryer basket. Set to air fry function for 20
minutes, shaking basket 3 times (spraying each time) during cooking process.
Mix together all the ingredients for the sauce.
When artichokes are cooked, serve on a platter sprinkled with fresh parsley and with
sauce on the side.
Serve warm.
