10. Place the agitator on the agitator driveshaft housing.

Note:
If agitator should stop turning during normal
operation, with
sanitized hands,
remove agitator
from agitator driveshaft housing and brush-clean with
sanitizing solution. Install the agitator back onto the
agitator driveshaft housing.
11. Remove the cotter pin from the pump. Stand the mix
feed tube in the corner of the mix hopper. Place the
cotter pin in position in the outlet fitting of the pump.
(See Figure 6-52.)

Note:
You have just sanitized all food contact surfaces
on the soft serve side of the freezer.
Priming
Note:
Use only
fresh
mix when priming the freezer.
1. Place an empty pail beneath the door spout. With the
prime plug in the
up
position (soft serve side only),
pour 2-1/2 gal. (9.5 L) of
fresh
mix into the mix
hopper allowing it to start flowing into the freezing
cylinder.
2. Open the draw valve immediately to remove all
sanitizing solution. When only
fresh
mix is flowing,
close the draw valve.
3. Once a steady stream of mix starts to flow from the
prime plug opening in the bottom of the freezer door,
push the prime plug down (soft serve side only).
Important!
Failure to remove all sanitizing solution
may result in damage to the freezing cylinder.
4. When mix stops bubbling down into the freezing
cylinder, remove the cotter pin from the outlet fitting
of the mix pump. Insert the outlet end of the mix feed
tube into the mix inlet hole in the mix hopper. Place
the inlet end of the mix feed tube into the outlet fitting
of the mix pump. Secure with the cotter pin.
5. Select the Auto symbol
.
Note:
The Brush-Clean Counter will start at this
time.
6. Fill the hopper with
fresh
mix and place the mix
hopper cover in position.
Repeat steps 1 through 6
for the other side of the
machine.
Closing Procedure
Note:
This procedure must be completed every day
To disassemble the Model C612, the following items will
be needed.
•
Two cleaning and sanitizing pails
•
Sanitizer/cleaner
•
Cleaning brushes (provided with machine)
•
Single-service towels
