Chunky Beef Pie
Makes: 2 pies
500g rump steak, cut into 2cm cubes
¼ cup plain flour
2 teaspoons cayenne
2 teaspoons butter
1 tablespoon oil
2 onions, chopped
1 clove garlic, crushed
1 teaspoon fresh thyme chopped
1 cup beef stock
¾ cup red wine
1 bay leaf
Salt and pepper, to taste
1. Toss beef in flour and cayenne. Season
with salt.
2. Heat butter and oil in a medium frypan
over medium heat. Add beef and cook until
golden. Remove from pan.
3. Add onion, garlic and thyme to frypan and
cook until softened. Return beef back to
frypan with remaining ingredients. Simmer
and cook for 15 minutes or until meat is
tender, approximately 15 minutes.
4. Season. Cover and allow mixture to cool.
Classic Mince Pie
Makes: 2 pies
2 tablespoons oil
3 onions, chopped
2 carrots, peeled, chopped
2 celery stalks, chopped
1 sprig rosemary
2 bay leaves
500g beef mince
1 teaspoon Dijon mustard
2 teaspoons Vegemite
1 tablespoon Worcestershire sauce
2 tablespoons flour
1½ cups beef stock
Salt and pepper, to taste
1. Heat half the oil in a large frypan over
medium heat. Add onions, carrot, celery,
rosemary and bay leaves. Cook until tender.
2. Add mince to frypan and cook until brown.
Stir through remaining ingredients.
3. Season. Cover and allow mixture to cool.
