Pork Injection Marinade (3 variations)
3/4 cup apple juice
1/2 cup water
1/2 cup sugar
1/4 cup kosher salt finely ground
2 tablespoons Worcestershire
Dizzy Pig:
2 c apple juice
½ c cider vinegar
¼ c Worcestershire
1 cup sugar
2 TBS rub (ground fine)
SpitJack:
1 ½ cups apple juice
1 cup apple cider vinegar
2 tablespoons Worcestershire sauce
½ cup sugar
2 Tablespoons salt
2 Tablespoons powdered (in a coffee grinder) rub (of your choice) or 2 more tablespoons
salt
Optional: hot sauce (e.g. Frank’s)
Heat the apple juice and add the salt, rub and sugar. When dissolved, add the remaining
ingredients. Cool.
