80g pecans, chopped
80g dark brown sugar
1 Tablespoon ground
cinnamon
1 teaspoon corn flour
500g strong white bread flour
7g sachet dried yeast
½ teaspoon salt
115g unsalted butter, softened
(+ extra to grease tin)
275ml luke warm milk
1 egg, lightly beaten
25g demerara sugar

salt. Make a well in the center, add the milk
mixture and stir until the dough just comes
together. Turn out onto a lightly floured surface
and knead for 5 minutes, or until the dough is
smooth and elastic.
4.
Roll the dough into a 30 x 40cm rectangle.
Spread with the remaining softened butter,
and sprinkle with the cinnamon filling.
5.
Starting from the long side, roll the dough
tightly into a Swiss roll shape. Trim the ends,
then cut into 6 x 6cm thick slices. Place the
slices cut side down into the prepared baking
tin, pressing gently. Leave in a warm place for
1 hour to rise.
