4  INSTALLATION

4.1 INSTALLATION PLACE

• The appliance must be installed in adequately ventilated

premises.
Connect the appliance according to the regulations in force: Gas
Safety (Installation and Use) Regulations, 1984; Health and
Safety at Work Act, 1974; Codes of Practice BS6173, 1982; The
building Regulations, 1985; The Building standards Regulations,
1981.

4.2 POSITIONING

• Place the cooker in position seeing to the levelling and height by

means of adjustable feet.

• Remove the protective film from the external panels by peeling it

back slowly in order to avoid any glue being left behind. If this
occurs, clean off the excess glue with benzine or other suitable
solvent.

• It is important to protect any close objects from the heat of the

appliance. Either insert heat protective material or leave a space
of at least 200 mm from the rear and sides of the appliance.

WARNING
The temperature at the base of the appliance exceeds 65°C. If
the floor material is flammable or not resistant to these
temperatures, it is recommended that a suitable heat resistant
material is placed between the appliance and the floor, with a
thickness of no less than 10mm (eg.steel).  (fig.1)

4.3 CONNECTION TO THE WATER SUPPLY AND DRAINAGE.

(Installation layout)

• Connect inlet water pipes “1” & “2” to the main water supply by

intercepting taps and suitable mechanical filtres.  Use the fittings
supplied.

• Before making the final connection, water should be allowed to

flow through the appliance in order to flush any corrosion or
impurities that may have formed.

• The outlet tap under the recipient should be adequately connected

to the drainage system.

• All connections should be heat resistant (minimum 100°C).
• The water used to generate the steam and cook the food must

be fit for human consumption and meet the following
characteristics:

- Total hardness 0.5 - 5° French;
- Concentration of chloride ions (CL-) ~ 10 ppm (parts per million);
- pH higher than 7;
- Electrical conductivity 50 - 2000 µS/cm at 20°C.

ATTENTION
The use of water with characteristics other than those indicated
above causes the general forfeiture of the warranty.
Do not use polyphosphates to remove the scale from inside
the pipes, as they can affect the proper operation of the
equipment.

4.4 WIRING CONNECTIONS

• The appliances are delivered prearranged for operation with a

power supply of 400 V 3N~ and can be transformed for operation
with a voltage of 230 V 3~.

• For any transformation, it is sufficient to modify the terminal board

and resistance element connections as shown in the wiring
diagram.

• To reach the connecting devices it is necessary to remove the

control panel.

• The connection to the power supply must include the installation

of an automatic circuit breaker of suitable capacity with an opening
distance between the contacts of at least 3 mm. In addition, the
supply voltage, with the machine in operation, must not deviate

from the nominal voltage value of ± 10%.

• The flexible cable for connecting to the power supply must have

characteristics of not less than type HO7RN-F rubber insulation
and a nominal cross section suitable for the maximum current
input.

• It is essential to connect the appliance to an efficient grounding

system. For this purpose, near the terminal board there is a clamp
identified with a tag with the symbol      to which must be connected
the grounding conductor. The grounding system must comply
with applicable standards. The appliance must also be included
in an equipotential system whose efficiency is verified in
compliance with the standards in force.

The manufacturer declines any responsibility for damage due to
noncompliance with these safety recommendations.

4.5 EQUIPOTENTIAL CONNECTION

• The appliance must be included in a equipotential system. This

connection should be undertaken with the set screw marked with
the symbol     .

• The earthing and equipotential systems must comply with the

standards and regulations in force.

The manufacturer declines any responsibility if the safety
regulations are not complied with.

5 - CHECKING THE OPERATION

ATTENTION!
Check that the jacket is filled with water up to the maximum
level (see Chapter II, Par. 3).

• Start the appliance according to operating instructions.
• Check with a snap-on ammeter that the power absorption of the

three phases is balanced and according to the power installed.

• Check the calibration of the safety valve.
• Check the lid balancing system.
• Train the user on the operation and maintenance of the appli-

ance with the help of the operator’s manual; stress in particular
the importance of all the points of caution to comply with for the
proper use of the appliance.

6 - MAINTENANCE

• All the components requiring maintenance are accessible after

removing the covering panels. Check from time to time the level
of the water in the jacket.

6.1 - SOME MALFUNCTIONS AND THEIR SOLUTIONS

Slow or insufficient heating

• Vent out the excess air from the jacket: press on the vacuum

valve push button “E”, causing a few puffs of steam.

• Check the power-supply voltage.
• Check the condition of the heating elements.

The appliance does not heat up

• Check the supply voltage.
• Check if the safety thermostat (TS1) has tripped (button “K” Fig.

6).

• Check the condition of the heating elements (RS1)(see wiring

diagrams Fig. 7);;

• Check the operation of the contactors (CO1-CO2);

6.2 - Change of components

Attention! Any components should only be changed by autho-
rized personnel, using original spare parts.

Replacing the heating element

• Remove the panel covering the heating elements.
• Disconnect the electrical connections from the heating element
