We recommend turning the gas burner to high to preheat the stone for approximately 30 minutes. Then
a few minutes before you are about to cook your pizza, put wood kindling/wood chunks in the back of the
oven on top of the wood burning tray for propane gas burner, and turn the burner knob to low or med/low.
If you have a non-contact infrared thermometer, try to get the middle of the stone to approximately 700-750F
and the back of the stone to 800-900+F. Rotate the pizza at quarter rotations approximately every 20 to 30
seconds.
WARNING: Only use this oven outdoors in a well-ventilated area. Do not use in a garage, building, breezeway
or any other enclosed area.
WARNING: Keep ventilation openings for cylinder enclosure free and clear from debris.
WARNING: Your Bertello Oven shall not be used under overhead combustible construction.
