Grill, be certain to read and understand all Dangers, Warnings and
Cautions found in this manual.
NOTE:
Place the grill away from open windows or doors to prevent smoke from entering your house.
Season Grill prior to First Use
First, place some wood chunks in water for about one hour. While wood chunks are soaking, add charcoal
to the grill and build a small fire. After coals are hot and ashen, add wet wood chunks to the fire and close
the lid. Leaving dampers about 1/4 open and lid closed, allow the grill to burn and smoke about 2 hours.
This will burn away residual manufacturing residue plus seal the paint. Prior to each use coat stainless
grates with vegetable oil to reduce food sticking, plus easier clean-up.
OPERATING INSTRUCTIONS
Grilling Fuel:
Lump Charcoal, Briquets or Wood.
It is recommended to use
All Natural Hardwood Lump Charcoal or Briquets
for a cleaner, hotter and
longer burn. When using wood, use only hardwoods such as mesquite or oak. Do not use green wood
or pine due to excess smoke and creosote/resin odors.
General Cooking
1) Fill the Firebox with 4 to 8 pounds of briquets or 2 to 3 pounds of natural lump charcoal. If you want
to cook at a slow and lower temperature, use less charcoal.
2) With lump charcoal, you can start cooking as soon as coals start to burn. You do not have to wait
for lump to turn ash white as with charcoal briquettes.
3) The temperature is regulated by controlling the air flow through the grill; therefore adjust both top and
side damper vents to reach the desired temperature. It may require some time to properly learn the
vent settings.
4) Close both top and side dampers completely when cooking is finished. The fire will extinguish and
any remaining charcoal can be reused.
LIGHTING
If you choose to use lighter fluid follow the manufacturer’s instruction to avoid injury.
1) Stack charcoal in a pyramid form.
2) After allowing the lighter fluid to properly soak in, light the pile of briquets in several locations to
ensure an even burn.
Always light the fire with grill lid open.
Leave lid open until briquets are fully
lit. Failure to do this could trap fumes from charcoal lighter fluid in grill and may result in a flash fire
when lid is opened. Allow the charcoal to burn for about 20 minutes before beginning to cook so that
the lighter fluid has time to burn off. Starting to cook too soon may leave food with a lighter fluid taste.
NOTE:
Chimney starters, electric starters, or other types of fire starters may be used instead of lighter
fluid to light fire but use only according to the manufacturer’s instructions.
NEVER USE INSTANT LIGHT
CHARCOAL OR CHARCOAL LIGHTER FLUID WITH ANY OF THESE OTHER STARTING METHODS.
3) After the coals are hot, use long-handled tongs to spread the charcoal.
WARNING
Charcoal lighting fluid must be allowed to completely burn off prior to closing lid (approximately 20
minutes). Failure to do this could trap fumes from charcoal lighting fluid in grill and may result in a
flash-fire or explosion when lid is opened.
