uncovered.
SANDWICH PREPARATION
A sandwich taken out of a refrigerator and heated in a microwave oven will be a quality product if it has been prepared
properly. The most optimum product is achieved by heating the sandwich without the top bun and adding the top the last
10 seconds of heating time.
Below are general instructions for heating sandwiches in the microwave oven.
1. Type of bread: Day old is preferred over fresh bread.
2. Buttered bread.
3. Fillings: All hamburger patties should be pre-seared to 155
°
F. Sliced meats should be well chilled and sliced very
thin. Score wieners and sausages.
4. Assembly: Keep fillings evenly distributed without overlapping edges of bread.In adding cheese to sandwich always
put cheese on bottom of sandwich. Any pre-assembled sandwiches must be wrapped and refrigerated.
5. After heating, garnish as desired.

Club Sandwich

turkey roll, 1 oz. tomato

Butter top slice of toast. Spread mayonnaise on 1
side of center slice of toast. Layer turkey, toast,
