Modify using the formula bar:

Select the cell by placing the mouse pointer over the cell and pressing the 
Touch Sensor.

Place the mouse pointer inside the formula bar and press the Touch Sensor.

Use the onscreen keyboard to modify the content of the cell. 

Modify using the context menu:
