To make nut milk, use 1 – 2 cups of raw or soaked and drained nuts. Process
them with the CHOP setting for 15 – 20 seconds until they are evenly chopped.
Soaked nuts might need to be pushed from the jug side towards the blades with
the included plastic spatula. Once the nuts are evenly chopped, add 3 – 4 cups
of pure water and blend everything in the MILL setting for 2 minutes. Prepare
a large jar and, for filtration, pour the mixture through a nut milk net (or a sieve
lined with a cotton or cheese cloth) placed over the jar. Close the cloth or net
and apply pressure to the puree to squeeze out as much milk as possible.

Should you water almonds or not? This is a question of personal taste, you can
prepare almond milk with soaked as well as with dry almonds. Almonds contain
a high amount of protein, however, they also contain a natural compound pre-
venting human enzymes from effectively processing and digesting the almonds.
To break up this compound, almonds should be placed in water over night. After
that, rinse and drain the almonds before further processing them.

Roasting nuts to process them into nut butter is highly recommended, as it will
help release natural oils when blending and also improve the taste. Some kinds
of nut, such as almonds and hazelnuts, have a lower fat content. If necessary,
you should add rice bran oil or macadamia resp. coconut oil when blending.

Freshly milled wholemeal flour will not stay fresh as long as commercially bought
flour. The reason for this is that the inner layers of the grain contain a lot of oil
which might turn rancid after a while of being exposed to heat or moisture.
Therefore, you should keep your freshly ground flour in an air-tight container in
a cool and dry place. In especially warm and moist climates, flour can even be
kept in the fridge.

Grains, soy beans and other dried legumes and other types of corn have vary-
ing degrees of moisture and might not be able to properly circulate during the
milling process. Use the included plastic spatula to improve circulation through
the measuring cap opening.
