Operation Instructions

I.

Model KSR-5000 Knife Sanitizer

The knife sanitizer, Model KRS-5000 consists of a sanitizer tank contained inside a stainless
steel housing. This tank can be filled with water and a sanitizing liquid, powder or tablet.  The
volume of the tank and sanitizing solution is 5 quarts, 1-1/4 gallons or 4-3/4 liters and the
sanitizing solution should be prepared according to the instructions of your sanitizer supplier
for this volume of liquid.

The immersion time in the sanitizing solution will also be determined by the strength of the
solution and the recommended immersion time as specified by the supplier of your sanitizer.

To function properly the knives must be submerged in the sanitizing solution for the required
time to destroy the bacteria and then placed in a knife rack for drying.

II.

The Model KSS-5050 Knife Sanitizing System

The Model KSS-5050 Knife Sanitizing System consists of  the Model KRS-5000 knife
sanitizer, a Model KR-50 knife rack and a mounting plate assembly A9942 on which the knife
sanitizer and the knife rack are mounted.  This mounted plate can be mounted to a wall or
work table using the installation instructions below.

Use of the Sanitizing Unit

1.  Prepare the sanitizing solution according to the instructions supplied by the supplier of

your sanitizer and fill the sanitizing tank with the solution to a level that just covers the
knife rack insert inside the sanitizing tank.

The fluid level line and the words “FLUID

LEVEL “ is stamped on the bracket that supports the knife rack insert inside the
tank.

2.  Place the knives that have been thoroughly cleaned to remove all food product and other

residue from them into the knife rack insert inside the tank and leave for the amount of
time as specified by the supplier of your sanitizer.

Warning:  All knives must be clean and free of all food and other particles for the
sanitizing solution to be effective. Knives made from carbon steel may rust if left in
the sanitizing fluid for a long period of time. The use of an iodine based sanitizer may
cause tank discoloration and prevent detection of the colored solution strength
change.

3.  After the required time period has elapsed, place the knives in a sanitized knife rack or if

you are using the knife sanitizing system, into a Model KR-50 knife rack and leave until
dry.

4.  The sanitizing fluid must be changed according to the instructions provided by the supplier

of your sanitizer by first removing the knives and knife insert and bracket and then lifting
