For the preparation of cappuccino the coffee should be ground until it is as fine as salt or
sand. Standard filter coffee is not suitable for Italian coffee specialities. Soft water is
ideal for cappuccino. Hard or salty water impairs the flavour considerably.
Latte macchiato recipe
1.
Prepare a fresh espresso in the machine. A normal espresso cup full is enough.
Always use the espresso when hot and do not let it cool down.
2.
Put the milk froth with a ladle in a tall, heat-proof glass. There may also be hot
flowing milk here. Fill the glass until it is almost full.
3.
Let the milk froth settle a little. You can also nudge the glass gently, this will help the
froth settle.
4.
If you need it to be quick, then put some hot milk in the glass right at the start.
5.
Now pour the espresso slowly and carefully in a circular motion into the glass. If you
are careful enough, the typical layers will form.
If you want you can also sprinkle some cocoa over the latte macchiato.
Coffee with syrup additives
You can buy different syrup additives in the shops which are used especially for refining
coffee. Examples are hazelnut syrup, chocolate syrup and vanilla syrup. You can also use
real maple syrup to give a fine flavour. With this method of preparation you should add
the syrup to the milk and froth both together.
Warning: never put the syrup in the container without milk because otherwise it
could stick to the container. If the milk frother is already switched on, an
unwanted deposit could also form in the container from heating the sugar
.
