Clean Removed Parts
•
Wash hands with warm water and use
antimicrobial soap.
•
Wash for a minimum of 20 seconds.
As in all areas of food
preparation, wash
your hands with liquid
antimicrobial soap before
and after preparing any
food products
•
Remove hopper cover, agitator blade,
front drip tray, splash shield, and left and
back drip pans.
•
Place all removed parts in a bucket and
take to the sink.
•
Wash, rinse, and sanitise using the 3-
step cleaning method.
•
Install agitator blade onto agitator drive
and replace the hopper cover.
•
Reinstall the drip pans, drip tray, and the
splash shield.
If agitator blade is not
installed, or not correctly
installed, the heat cycle
will not work and the
machine will be locked
out in the morning! —
The agitator blade must
turn.
Sanitise the Door Spout, Handle,
and Outside Surfaces
•
Use the front counter blue and red
bucket system. Clean the buckets and
fill the blue bucket with fresh Kay-5
sanitiser solution and the red bucket with
clean hot water. Bring the bucket to the
machine.
•
Add 1 packet Kay-5 sanitiser to 9.5 litres
of warm water (blue bucket).
•
Dip the yellow short handle brush in
Kay-5 sanitiser solution and clean the
door spout and bottom of handle.
•
Rinse the brush in the red bucket after
each cleaning step.
•
Using a clean, sanitised blue/green cloth,
wipe freezer door, front panel, and other
outside surfaces.
Check Level of Mix in Hopper
•
Check the level of mix in the mix hopper
and add product if needed.
•
The level of the mix must be above the
mix low probe before starting.
Be sure
MIX LOW
light is
not on.
Set AUTO Mode
•
Ensure the AUTO symbol is lit. The unit
must be in AUTO before the heat cycle is
started.
•
The heat cycle is pre-programmed
to occur after the restaurant closes
according to the pre-programmed “Auto
heat time.”
Set 4-Hour Heat Cycle
•
The heat treatment cycle is designed to
destroy bacteria. This cycle will raise the
temperature of the mix in the freezing
cylinder and the hopper, and then lower it
enough to slow down spoilage.
•
Once the heating cycle has started,
it cannot be interrupted. The heating
cycle will take a maximum of 4 hours to
complete with a full hopper.
