ROAST BEEF WITH ROOT VEGETABLES
Serves 4
Ingredients:
2 small carrots, sliced
2 small parsnips, sliced
1 red onion (thin wedges)
2 sprigs thyme
2 tsp honey
2 tsp olive oil
1 kg topside of beef
salt and pepper
Method:
Note: The cooking time is for medium-rare beef. For well done, add 15 minutes.
1. Preheat air fryer at 180°C.
2. Mix the vegetables, thyme, herbs, honey, and oil in a bowl.
3. Put the mixture in the basket.
4. Lay the beef on top.
5. Season with salt and pepper.
6. Cook for 60 minutes.
7. Turn the food half way through cooking. Rest for 10 minutes before serving.
