PRIMARY AIR VALVE
The cooker is fitted with a primary air adjustment located in the lower part of the firebox (fig. 9 ref. A), and to access, open the door for
loading the firewood. A fixed secondary air inlet is located in the upper part of the firebox sides and this improves the functioning with a
consequent increase in efficiency and reduction in carbon monoxide emissions into the atmosphere. An additional, fixed secondary air inlet
is located on the cooker door of the visible version, above and below the ceramic glass, which helps to keep the glass clean much longer.
SMOKE VALVE
Another device for improving the functioning is the smoke valve (fig. 9 ref. B) that is located on the radiant plate close to the smoke collar.
It can be moved with its special lever.
COOKING ON THE RADIANT PLATE
To ensure that the food is cooked well when using the radiant plate, always use flat-bottomed pans. The radiant base is designed for quick,
simple cooking. The hottest part of the plate corresponds to the rings and this is the part where the pan should be placed for it to heat-up
rapidly.
The outer parts of the plate are intended for keeping cooked food hot. For maximum cooking speed use finely chopped wood.
The plate must not be overheated because there is a risk of damaging the cooker without any advantages for the cooking of the food.
COOKING IN THE OVEN
The cooker is equipped with an oven in enamelled steel for cooking food
The oven has internal glass and a thermometer to simplify temperature checks.
The temperature shown by the thermometer is indicative and intended as a reference for the cooking. The oven has a support grill and a
non-stick roasting pan.
When cooking, the stove must be at normal operating temperature (see adjustments section) and the smoke valve must be closed for at
least 60 minutes. The fire must be fed with chopped wood in small/medium pieces to bring the oven to the desired temperature. Once this
temperature is reached, reduce the wood load to keep the oven temperature constant.
Halfway through cooking, with the supplied glove, remove the pan and rotate it by 180° before replacing it in the oven. This gives a more
uniform cooking for most types of food.
P.S. During cooking, it is advisable to open the internal glass as little as possible so that the temperature does not go down.
ADJUSTMENTS
· To obtain a good compromise between thermal efficiency and fuel consumption the following positions are recommended:
During normal use, the fire intensity adjustment must be made using the primary air control and the secondary air control.
· The adjustment positions shown below refer to the appliance when it is already functioning normally and are purely indicative.
· The adjustments for an optimum efficiency of our appliance are:
