3 . Toss the garlic and onion with the olive oil and a pinch each of the salt and
pepper in the prepared pan . Set the Toaster Oven Broiler to 400°F on the Bake
setting with the lower rack in the lower position . Roast for 8 to 10 minutes, or
until the garlic and onion are softened and fragrant, but not brown .
4 . Add the roasted garlic and onion to the bowl with the blanched vegetables .
Add the remaining salt and pepper, half of the Cheddar and half of the
breadcrumbs . Toss to fully combine .
6 . Transfer mixture to the pan ( the same one that was used for the garlic and
onion) and top with the remaining cheeses and breadcrumbs .
7 . Put the filled pan on the rack and bake (still at 400°F) for 20 minutes, until
vegetables are tender and cheeses are browned . Serve immediately .

pound asparagus, trimmed of rough ends

Sweet Potato Wedges

and lime juice, but you can spice it up with some chili flakes or cayenne, or make

sweet potato, peeled, cut into 3-inch wedges

1 . Line the baking pan with aluminum foil . Drizzle the olive oil over the pan and
then add the potato wedges . Sprinkle with the salt and pepper and toss gently
to coat .
2 . Arrange the potato wedges into one layer and put pan into the Toaster Oven
Broiler into the upper position .
3 . Set oven to 400°F on the Bake setting . Bake sweet potatoes for 20 minutes,
or until browned at the edges .
4 . Remove from oven and squeeze fresh lime over the potatoes and sprinkle with
the fresh parsley .
