You should remember the following points:
In the Cook phase, a temperature range of 120°C to 150°C is best for the convection and super-
heated-steam cooking programs.
The temperature for switching into the Hold phase depends on the amount of food in the oven, the
type of meat and the size of the piece of meat.
Set the hold temperature to the target core temperature your require so that the food cannot be
overcooked.
